Éric Texier works in the Rhône Valley making natural wines reflective of their unique terroir. Chat Fou is made from Grenache and 10% Clairette (a white grape), grown on granitic soil. The grapes are destemmed and undergo a cold maceration for aromatic extraction. The wine is fermented with natural yeasts, with pigeage and remontage twice a day and then aged for 15 months in concrete. Juicy with tart cherry, plum and floral notes. Crushable and delicious!
